I made this last night and It was SOOOO yummy!!!:tup:

ingrediants:
5 eggs
2 tbsp minced onion
2 tbsp chopped tomato (make the pieces really small, and you don't want the juicy parts)
1 1/2 tbsp mayo (not miracle whip, that stuff's gross:down: )
salt
pepper
powdered garlic
2 1/2 tbsp sargento's bistro shredded cheese (this stuff is AWSOME!)

directions:
1. boil the eggs so that the yolks are JUST done (so they're still moist, not dryed out. I usually have them on a hard boil for like 2 minutes, turn off the heat, after the bubbles go away put under cool water) reason being is that you need less mayo this way.

2. peal eggs carefully (at least with me cause I'm horrible at egg pealing)

3. Mix eggs, onion, tomato, cheese, and mayo together

4. add salt, pepper, and garlic to taste (very little garlic)

made about 2 1/2 cups, add more mayo if you like urs really mayo-ey, I like mines more on the dry side. I ate it with garlic roasted triscuts and It was really good.:)

I like egg salad a lot. I am still trying to get the egg peeling thing down. Sometimes they all peel right & other times not. I found that works best though when they are still warm & press into the shell til it feels just right then peel the whole thing at once.

I will add the Chx salad we made a couple of days ago.
3-4 cups of cut boiled chicken. We put both the white & dark.
mayo to your liking.
a squirt or three of mustard
20 to 30 raisins or 10 sliced grapes
1/4 cup of chopped celery
2 tablespoons sweet or dill pickle relish
1 tablespoon chopped yellow onion
1 tablespoon of finely chopped cashews
white pepper


mix it all up real good & put in fridge over night for flavors to blend. scoop onto either sour dough, seven grain or white italian bread with lettuce.
I kind of made that up myself & it is yummy.

Take your boiled egg, and tap it lightly on the surface of your counter,to lightly crack

Then roll the egg between the palms of your hands. This loosens the shell all around the egg.

Now the shell should slip right off.

Don't remember where I learned this trick, but it works...

I've actually heard that trick before, I just can't get it to work well yet. It does help though:D

heres my Mom's egg salad recipe

Boil 6 eggs
peel
smash with a fork on a dinner plate
add 1/2 C diced extra sharp cheddar cheese( Cabots is good)
add about 1/2 C Miracle whip or mayonaisse
salt and pepper if desired
Chill and eat later
YUM

P.S. my husband never liked egg salad at all until he tasted this

I like to use the DUKE's brand mayonaisse
