Got some beets? Four of them? Grate them. Just do it. Don't argue.

Grate half a cabbage and a few nice sized carrots. C'mon. . they're vegetables. They need to know who's boss. What's that? Potatoes? Yes. Two of them cut into small cube will teach them a lesson.

Shove it all in a pot with three vegetable stock cubes and a little less than half a pot of water.

Garlic. . .loads of it. Don't be shy. Onion too. One whole onion.

Spices? You got any? You've really got to clean this cabinet out. Salt. . .pepper. Nice. Lot's of pepper. Italian herbs maybe. Like oregano. Yeah fine. Cayene pepper. Sure. OH! Why didn't you tell me you had Hungarian Paprika!

Close the lid. Bring to a Boil then down to a simmer and go away to watch TV for 30 minutes. Scrubs on?

Now. . .if you really love mom's borsht. . although you COULD eat it now. . .you could also keep it in the fridge overnight and let it ferment and have it tommorow. With a dab of sour cream. Mazel tov.
