I know we have the "Share a recipe with me" thread. But I not only need recipes I need whole new menus!! Tonight I'm making tacos for the millionith time. However, I'm going to try a new bean dip with the tacos.

Hopefully Wild Turkey! My husband is hunting for a big gobbler tonight and me and the children are going looking for Morels (Hickory Chickens or Dry Land Fish) to fry up with it! We had a batch Wednesday, first time this year and they were delicious! Oh, and probably some homemade mashed potatoes and macaroni and cheese. Yummy!

Sis Renee, we are in South Central Ky, which is quite a way away from Corbin. And no, I don't think wild turkey tastes anything like a butterball but it may be just I dont' fix it right LOL! They have that "game" taste and are tougher so the best way I have found to cook them is to fry the meat. We like to cut it in strips or even nuggets and fry them..
by the way my 7 year old son found some hickory chickens so it looks like I'll have to fix them up. Yummy! Oh! I might as well make soem buttermilk biscuits and country gravy to go with it. I don't know if I can wait for the turkey! I may just have to have morels, biscuits, gravy, and eggs instead! Yes, that is what it is. Unless sis sherry gives me the goahead to join her for supper tonight! LOL! ;)

Well since it was 73 degrees here today...I made grilled HOt Dogs with Chili and Cole Slaw, Corn on the Cob and macaroni salad and we ate outside ...LOVE IT!!!!

Here is a sight that explains what morels are. Around here though people always called them hickory chickens or dry land fish.

It is so fun to go looking in the woods for them as a family outing. Here is a picture I took of one my son found today. It is quite small but still oh so tasty!
Where do you live Sister Cooper? You may have a southern delicacy growing right in your backyard! They are only up for about 4 weeks, and this is in the middle of the 2nd week for us. And then they are gone again for a whole nuther year. :( The kids really love to look for them and they are sooo hard to see in all the leaves and camoflauge, but when they do, it is so exciting! You get about 15-20 and you have enough for the meat dish for a family of 5. You bread them and fry them, after cutting them in halves and cleaning them real good. yummy yummy yummy! They are excellent fried up with scrambled eggs too.

We got a grill that is also a smoker. It was only $30 at Walmart and it cooks so good. We are thinking about cooking out tomorrow. It will be quite a bit hotter than 75, but we have big shade trees in the front to shade us from the sun. :spin:

We are eating for dinner,,, whatever the Olive Garden serves up! Thank goodness! a WEEKEND WITH NOOOOO KIDS... besides the hubby said he is tired of possum gumbo and armadillo jambalya!! LOL God bless yall and have a good nite... Going out and bein freeeeeeee from kids (love em but mercy its nice to have a break) :)

I didn't cook dinner tonight, went to Cracker Barrel...good country cooking, but I did have a salad with my dinner. :)

What is Macaroni Loaf??
I make macaroni and cheese.The wonderful kind made with melted american cheese and half and half plus shredded colby and I also stir in some Asiago.
When its melted I stir it into already waiting macaroni noodles(these can be low carb since Luxary does them now.)Then I stir in cubed turkey ham and place in a lazagna pan and top with american cheese and place in a 350 F oven for about thirty minutes.I am careful not to burn the cheese.I usually make two and put one in the freezer and we have that on one of my work days.lv sis.c

Where are all the low carb. eaters? I had a bunless cheeseburger with green beans. The nice weather is coming and I can't deal with another summer of my legs uncomfortably rubbing together, so....gotta cut those carbs-sugar, white bread, white rice and anything else that turns into excess sugar.
I was just thinking "STOP TALKING PASTA!!!!"
I'm doing something that's sort of a blend between Atkins and Weight Watchers. I need the high protein because I'm fighting diabetes (and winning thus far)....but I need the "points" methods of WW to make myself eat ENOUGH. Otherwise, I go into ketosis and lose all my appetite and cease to eat enough to keep my metabolism working. (Long story.)
My daughter and I like the precooked meats by Hormel....since it's just the two of us most nights. Tonight she made green beans, seasoned with chicken bouillion and with real bacon bits in them....and nuked a package of the Hormel Pork au Jus....very tender and flavorful.

I "have it", but manage to stay just close enough to normal to not need medicine.
After watching it kill my mother, and seeing it attack my older sister -- I'm very determined to not give up without a fight.
I read Dr. Atkins' book years ago and it made SO much sense!! My doctor at the time had lost 75 lbs on the Protein Power diet so he supported me giving it a try, I did, three times, but each time stopped losing after about 20 pounds no matter how long I stayed on it. The doctor examined my food journals and determined I "wasn't eating enough".
Great....there's one that'll make you crazy...."I'm not losing weight BECAUSE I'm not eating enough!"

Anyhow -- because I was declined by my insurance for gastric bypass a few years ago (insufficient documentation of diets!!!) I decided to go to Weight Watchers. Incredibly, I lost, even though I wasn't sticking to strictly low-carb, hi-protein. I eventually realized it was that minimum point requirement. Because weeks I tried to hurry things along by eating LESS than I was allowed -- I had a poor loss. But weeks that I ate at the top end of my points range -- or even ABOVE!! -- I had better losses.
In 2002, I lost 50 lbs in about 6 months -- and foolishly thought I could give it up while I went thru a stressful time. No -- I didn't gain it all right back, BUT, I can't get the "losing momentum" going again.
I gained and lost the same five pounds for a year and a half....and in the last few months have allowed a little more to creep back on. :flame:
No one to blame but myself.
How long have you done Atkins...? Do you have any problems with loss of appetite?
I always tell people its a "different" way to diet -- first, it requires taking everything you've ever tho't about and flipping it (Butter is bad -- NO, butter is okay! etc) Then -- you're never "hungry"....you can always eat. Thirdly -- it's BORING! You get tired of the same things over and over and its harder to provide variety!
WHICH to me those last two prove what we've said all along -- we eat out of boredom more than out of hunger.
Sorry -- is all of this too off topic??

Sometimes we have to eat what we want or we'll go crazy!! If I stay off sugar, corn, carrots, rice and potatoes I can pretty much keep my glucose under control. It is funny that DR. Atkins went against the grain of traditional dieting and had great success. I can't understand why the medical community is still fighting against his concepts. They work. I hate to think of the possibility of losing arms, legs and eyesight. I want to eventually get to the place where I can stay on Atkins continually, without cheating. I KNOW it will be hard. I am terribly addicted to chocolate. ANY CHOCOLATE. When I was pregnant with my youngest son, my diabetes was out of control. I had to have 3 insulin injections a day. I thought I would go out of my mind for lack of chocolate. While I was on the delivery table with the child literally hanging halfway out of my body, I was asking for Toll House cookies!! That's bad. I may try what you're doing with Weight Watchers. They sure have a lot of good recipes. Hang in there!! When you get to heaven you'll be able to eat anything you want.

My doctor said who ever came up with that food pyramid needed to be indicted for murder for all the diabetics who've died eating NINE to ELEVEN servings of grains and vegetables a day!
I want to eventually get to the place where I can stay on Atkins continually, without cheating. I KNOW it will be hard.
I don't think that's a good idea....I saw a documentary on it a few months ago. They say if you stay on it longer than about 10 months, your body begins to figure out how to conserve the stored fat instead of burn it. Can't remember how to explain it. But they recommend shorter periods of time, with resting in between.
My son went on it Thanksgiving and by Valentines had lost 40 lbs. He took a break and has lost another 8 eating anything he wants! He's just restarted Atkins this week.

:laugh: That's funny! I craved Russel Stover Pecan Logs with my last one -- had to have one every day!! I would rob the kids piggy banks to get the change to go get one!! But, I although I gained tremendously and had really big babies, I never tested positive for gestational diabetes.

I will be fixing Mashed Potatoes with it and using the drippings to make gravy (yummmmmmmmm) corn, and a HUGE tossed salad! We are big salad eaters!
And what is a good dinner without some good old fashion homemade Iced Tea(sweet of course!)

I'm making a lasagna for a church fellowship tonight. This particular recipe has
SO much cheese in it. Mozzarella, cottage cheese, ricotta cheese, parmesan and provolone. It is SO good, but I only make it for special occasions because it will stop your heart.

Yes, I think it's pretty much the same as Skyline Chili. I've turned my husband into a lover of Cincinatti chili.
Anybody know what I can do with a boiled chicken? I didn't feel like heating up the oven to roast it. It's in the 90's today.

Debone it, shred the meat and sprinkle on tortillas with cheddar cheese, onions, tomatoes & jalapenoes. Broil on low till cheese is melted... Top with sour cream and cilantro and you have quesadillas.:D

Here you go. I usually add more Chili powder than the recipe calls for, but try tasting it and adding a little at a time. I also add beans to mine and top with lots and lots of sharp cheddar cheese and oyster crackers.
1 tablespoon vegetable oil
1/2 cup chopped onion
2 pounds ground beef
1/4 cup chili powder
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1 bay leaf
1/2 (1 ounce) square unsweetened chocolate
2 (10.5 ounce) cans beef broth
1 (15 ounce) can tomato sauce
2 tablespoons cider vinegar
1/4 teaspoon ground cayenne pepper
1/4 cup shredded Cheddar cheese
1 Heat oil in a large saucepan over medium heat. Add onion and cook, stirring frequently, until tender, about 6 minutes.
2 Add beef, in batches if necessary, and cook, breaking up with a wooden spoon, until browned.
3 Add chili powder, cinnamon, cumin, allspice, cloves, bay leaf, chocolate, beef broth, tomato sauce, cider vinegar, and red pepper. Stir to mix well. Bring to a boil. Reduce heat to low; cover and simmer 1 1/2 hours, stirring occasionally.
4 It is the best if you now refrigerate overnight.
5 Remove the bay leaf. Reheat gently over medium heat. Serve over hot, drained spaghetti. Top with shredded cheddar cheese.
Makes 8 servings

Last night we had chili and Mexican corn bread muffins (make reg. corn bread and add 1 can drained corn --- I use frozend---, a can of diced green chilis or jalepenos adn grated cheese. You need to also add about 1/4 cup corn meal as the cheese will make it wetter than normal)
Going to sister in laws tonight :) a night off!!!!!!!

I know we have the "Share a recipe with me" thread. But I not only need recipes I need whole new menus!! Tonight I'm making tacos for the millionith time. However, I'm going to try a new bean dip with the tacos.
I tried this on Tuesday night. Mmmmmmmmmmmmmm.
Defrost 3 chicken breasts. (I defrosted mine in cold water) Put in pan or bowl. Pour 1/4 cup oil and 1/4 cup lemon juice over the chicken. Top with 1 tablespoon Old Bay Seasoning (usually used for shrimp), 1 teaspoon of pepper, and 1 teaspoon of garlic with parsley in it. Marinate for a half an hour or so, turning, and barbeque it on the grill. Mmmmmmmmmmmmmmm. Also, Rice a Roni salad is good.

Too hard for me. Only made them once. Hey, what about stuffed bell peppers. Those are easy. Hamburger, rice, seasoning, bake in bell pepper I think 1 hour at 350.

So what did you do with the ground beef? I'm always taking it out of the freezer to thaw without a clue of what I'm going to do with it.

This is so hilarious. We have been working around the house today and were exhausted. So, it ended up being Burger King and saving the hamburger meat for tomorrow night. I will let you know what we decide to do with it tomorrow. :)

We are having chicken on the grill. I take boneless chicken and marinate it in italian dressing mixed with honey and soy sauce. Mine has been marinating for two days..It is very good, then I just grill it.
I am having carrots and cabbage with it.

Shrimp Ettouffee
10 lbs shrimp(dehead,peel,devein.)
In large dutch over put two tablespoons olive oil.When it heats up add
1 stick of REAL butter.
Next add one chopped/diced onion
Next add one bunch scallions.
Saute until onions are clear and scallions wilted.
To this add two cans Rotel milder diced tomatoes.
One can peeled and stewed diced tomatoes.
Two cans cream of mushroom soup
Two cans chedder cheese soup.
Stir will and heat on low until bubbly.
Then stir in shrimp and cook another fifteen minutes with lid on pot until shrimp are done.
Serve over hot rice
and with salad,side,french bread or Texas Toast
Cold lemonade.

Tonight I made Italian saugage smothered in peppers and onions for the family
I had a Lean Cuisine but it was VERY good...Grilled Chicken Alfredo FLorentine YUM!
I have made cabbage rolls a few times but I agree with the earlier post, by the time you do all the work...I dont feel like eating! LOL Now, my mother on the other hand...mmmmmmmm she can make some cabbage rolls and bless her heart she always makes extra ;)
I seen a couple of posts for different ways to marinate Chicken Breast
The best one I do is...
Bottle of Apple Cider Vinager
Bottle of Lousianna HOt Sauce
Oil and Butter
I let that marinate for about 2 days and then grill
Girls......mmmmm this so soooooo good!
I have also marinated chicken breast in Miracle Whip for a day and then grill

Does anyone know why they don't sell cornbread or cornbread muffins ready-to-eat at the store?? I'm sure it must spoil quickly, but still, you'd think there'd be a market for it.

I made my family homemade chicken and noodles. I thought of my mother as I was rolling them out, I miss her and wish I could tell her I loved her once again. Those of you with mothers still alive, call them and tell them you love them. It will mean so much to them now, and a lot to you later.

I made chicken and dumplings last night. They were very Yummy! Reading about the sausage and peppers and onions...I did that last week and also did hamburger that way. My mom used to call it Hobo steaks. What I did was make hamburger patties and place in baking dish with bell peppers and onions sliced up and a little bit of steak sauce dashed over it all. You can also cut up potatoes and drop them in with the meat. Talk about quick and easy and delish!

I don't cook, JW does (and he is barefoot). I did walk out to the freezer, get the turkey roast out, put it on a cookie sheet and stick it in the oven. Other than that, the rest of the meal will be cooked by JW, except the tea I will make. So, it isn't impossible for you, A MAN, to cook for yourself.

JW grilled some pork chops, polish sausages, chedderwurst sausages, and a little bit of salmon for him. It was all good. I didn't try the salmon because I don't like it. I love grilled food.

Tonight I'm fixing Chicken, garlic bread, wild rice, and spinach
Chicken:
Place boneless/skinless chicken breasts or tenders in dish.
top with plenty of swiss cheese
top with cream of chicken soup
sprinkle on stuffing mix
bake at 350 (time depends on chicken type)
Yum!!!!!!!!! (especially if you use LOTS of cheese!)

Hi Sister Cooper... Saw this question on your post and thought I'd share what I use in my BBQ sauce...
-bottle of regular bbq sauce (Hint- darker the color, the better)
-jar of honey (or however much you want)
-dejon mustard (just a dallop)
-dash of cayenne pepper (optional)
And if you like teriyaki bbq sauce, eliminate the honey and mustard in exchange with a half cup of teriyaki marinade (sauce) and voila~
PS. these are for kindergarten cooks like me hehehe....

ROTFLOL. :icon_laug Well, I'm not much of a cook, but I guess I can tell you about the time that I cooked macaroni and cheese mixed with cat food for my parents. ROTFLOL. :icon_laug It happened when we were having drama practice that nite. And I volunteered to cook, so mom agreed. So here I go, cooking my famous macaroni and cheese and I get the can to go mix in the tuna right? And we had a very picky cat @ the time, and he would eat nothing but canned cat food. So I grabbed a can and mixed it in with the macaroni and cheese. So than I served it to my parents, and they ate it too!! ROTFLOL. :icon_laug Even tho they kept saying, "WHAT is IN this??!! Tastes GRITTY!! It doesn't taste like tuna" And than mom looks at me and she says, "Maria, did you put the cat food in with the macaroni and cheese???" And I look over at the counter, there's the tuna fish can sitting there. And the empty can of cat food sitting there on the counter. I said, "WOOPS!! Guess I did!" Well, they spit it out right away and gave the rest of the supper to the dog. And not even the DOG would eat it either! ROTFLOL. :icon_laug So now ya'll know, I can't cook worth anything. ROTFLOL. And so I'll have to find me a man to help me cook! ROTFLOL. :laugh: :icon_danc Here's my man! *snickers* :icon_danc
